Golden Quinoa & Red Rice with Mushrooms

Ingredients
- 1 cup Tiny Hero® Golden Quinoa & Red Rice
- 3 cups chicken or vegetable broth
- ½ large onion, diced
- ¾ cup sliced mushrooms
- ¾ cup diced zucchini
- 2 garlic cloves, minced
- 1 Tbsp. Italian seasoning
- Salt and pepper to taste
Directions
- Boil broth. Add Tiny Hero® Golden Quinoa & Red Rice and simmer for 13-16 minutes. Drain with a fine mesh strainer and set aside.
- Heat olive oil in large sauté pan and then add in the onions, mushrooms, zucchini, and garlic. Sauté for 5-7 minutes or until vegetables are tender.
- Add in Golden Quinoa & Red Rice, Italian seasoning, and salt and pepper to pan. Remove from heat and mix well.
