Golden Quinoa & Red Rice with Mushrooms

Ingredients

  • 1 cup Tiny Hero® Golden Quinoa & Red Rice
  • 3 cups chicken or vegetable broth
  • ½ large onion, diced
  • ¾ cup sliced mushrooms
  • ¾ cup diced zucchini
  • 2 garlic cloves, minced
  • 1 Tbsp. Italian seasoning
  • Salt and pepper to taste

Directions

  1. Boil broth. Add Tiny Hero® Golden Quinoa & Red Rice and simmer for 13-16 minutes. Drain with a fine mesh strainer and set aside.
  2. Heat olive oil in large sauté pan and then add in the onions, mushrooms, zucchini, and garlic. Sauté for 5-7 minutes or until vegetables are tender.
  3. Add in Golden Quinoa & Red Rice, Italian seasoning, and salt and pepper to pan. Remove from heat and mix well.
