Greek Quinoa Salad

  • 2 cups Tiny Hero® Golden Quinoa
  • 2 cups diced tomatoes
  • 2 cups diced cucumbers
  • 1 cup Kalamata olives, pitted and quartered
  • 1/4 cup red wine vinaigrette dressing
  • 1 tsp dried oregano
  • 2 tbsp lemon juice
  • 2 tbsp mint
  • 1/4 cup feta cheese


  1. Boil 8-10 cups water. Add Tiny Hero® Golden Quinoa and wait 12-15 minutes. Drain under cold water.
  2. In a large bowl, mix Tiny Hero® Golden Quinoa, tomatoes, cucumbers, and olive.
  3. Add in red wine vinaigrette dressing, oregano, and lemon juice and gently mix. Cover the bowl and place in the refrigerator for 30 minutes to let the flavors develop.
  4. Just before eating, chop the mint and crumble the feta cheese. Mix these in with the rest of the ingredients.
