- 2 cups Tiny Hero® Golden Quinoa
- 2 cups diced tomatoes
- 2 cups diced cucumbers
- 1 cup Kalamata olives, pitted and quartered
- 1/4 cup red wine vinaigrette dressing
- 1 tsp dried oregano
- 2 tbsp lemon juice
- 2 tbsp mint
- 1/4 cup feta cheese
- Boil 8-10 cups water. Add Tiny Hero® Golden Quinoa and wait 12-15 minutes. Drain under cold water.
- In a large bowl, mix Tiny Hero® Golden Quinoa, tomatoes, cucumbers, and olive.
- Add in red wine vinaigrette dressing, oregano, and lemon juice and gently mix. Cover the bowl and place in the refrigerator for 30 minutes to let the flavors develop.
- Just before eating, chop the mint and crumble the feta cheese. Mix these in with the rest of the ingredients.
